Beet it



Ingredients:
Vanilla ice cream - 3 scoops
Mixed fruit jam - 2 tsp
Condensed milk - 2 tbsp
Cream - 1 tsp
Vermicelli - 1 tbsp
Black kuskus - 2 tsp
Mango cut into small pieces - 1/2 cup
Pine apple cut into small pieces - 1/2 cup
Banana cut into small pieces - 1/4 cup
Apple cut into small pieces- 1/2 cup
Grapes cut into four - 1/4 cup
Sugar syrup - 1/4 cup
Cashew and almonds cut into small pieces - 1/2 cup
Ice cream sprinkles,pieces of strawberry,full cashew and almonds for garnishing




Method:
       Take a glass.On the bottom of the glass,add 1 tsp jam.Mix Vermicelli with cream and condensed milk.Now layer the glass with vermicelli.Now mix all the fruits with sugar syrup.layer the glass with fruits.nw add kuskus and dry fruits.Add ice cream scoops to it and garnish with ice cream sprnkles and dry fruits.

Pine apple burfi balls - Kerala Day Special




Ingredients:
Pine apple - 1 cup
Coconut - 1/2 cup
Sugar - 1/2 cup
Crushed cashew - 1 tbsp
Chopped almonds - 1 tbsp


Method:

   Cut the pineapple into small pieces and cook until water seperates.Now add coconut and sugar along with this and roast it well.Now add cashew and almonds.Apply ghee in a pan,spread the mixture into it and allow it to cool.Once it get cooled cut it into different shapes or can make it a small balls.



Mix with ice cream and eat.u will surely enjoy.

Cheesy Almond Toasts





Ingredients;

Bread slices - 4
Grated cheddar cheese - 3 tbsp
Egg - 1
Almond powder - 4 tbsp
Finely chopped cabbage - 1/4 cup
Butter to spread
Pepper powder -1/4 tsp
Salt to taste



Preparation:

    Whisk the cheese with salt,pepper and egg to get a coating consistency.Now add almond powder and cabbage.Now butter both the sides of bread.Spread the mix on one side of the slice.Grill in medium flame for 10-12 minutes.The toast is ready.Good as break fast.

Sweet Banana Cutlet and an award!!!


 



Ingredients:

Kerala Banana,ethapazham (not so ripe not so raw) - 2 nos
Almonds (chopped and fried without skin) - 6-7
Kismis (fried) - 9-10
Coconut fried - 1 cup
Cardamom powder - a pinch
Sugar if required
Ghee or oil for shallow frying



Preparation:

     Steam the bananas in a steamer.Then smash it with a spoon/masher.Now mix all the ingredients.Make into balls and shape it like cutlets.Heat oil/ghee and shallow fry it.Serve hot.

Pine apple jelly pudding - Valentine's Day Special

Ingredients:

Pine apple jelly - 1 pkt
Gelatin - 2 tbsp/10 gms
Condensed milk-1 cup
Full Cream Milk - 1 cup
Dream whip pwder - 1 sachet



Preparation:

     Blend all the ingredients together in a blender.Pour the mix onto a pudding tray and keep aside for 30 minutes to get the pudding texture.Now you can keep in the refrigerator.Garnish with kiwi and strawberry.Cut and serve.Enjoy




 I got this recipe from my cousin Siya. I should say this is from Siya's kitchen. This pine apple jelly pudding was awesome after the heavy dinner.



Tips:

U can substitute pine apple jelly with jelly of your choice.
For decoration,u can use fruits like berry,apple.....or any fruit of your choice

Tropical Splash


Ingredients:
Strawberry - 3 nos.
Banana - 1
Kiwi - 1
Chilled Milk - 2 cups
Sugar - 2 tsp
Condensed milk - 1 tbsp
Almond powder - 2 tsp





Preparation:

             Throw in all the ingredients into a blender.Blend until thick and frothy.Serve straight from the blender.Enjoy!!!

Broccoli Mayo Wraps


Ingredients:

Chappathi - 4 nos.
Cumin seeds - 1 tsp
Finely chopped garlic - 1 tsp
Onion cut into rings - 1
Tomato cut into small pieces - 1
Broccoli small cut into tiny florets - 1
Coriander powder - 1/2 tsp
Garam masala - 1/4 tsp
Mango powder - 1/4 tsp
Turmeric powder - 1/4 tsp
Lemon juice - 1 tbsp
Mayonnaise - 3-4 tbsp
Tomato ketchup - 2 tbsp
Oil - 3 tbsp
Salt to taste



    
Preparation:

             Heat oil in a pan for filling.Add jeera/cumin seeds and garlic,stir till the colour changes.Now add onion rings and stir till it becomes soft.Add broccoli and fry for sometimes.Now add all the powders including garam masala.Now add tomato and fry for sometimes.add lemon juice and salt to taste.when broccoli gets cooked remove from fire.

            Now spread some mayonnaise on each chappathi covering till the sides.spread the filling mixture on the chappathi and roll it tightly and seal the end with some tomato ketchup.Heat 1 tbsp oil and pan fry the wrap with tucked side down till golden on both sides.Serve hot.

Chocolate payasam






Ingredients:

Indian Vermicelli  - 1/4 cup
Milk- 1 cup
Sugar - 2 tbsp or as per taste
Coco powder - 1 tbsp
Chocolate chips - 8-10
Cardamom power - 1/2 teaspoon
Cashew Nuts - 5-6
Raisins - 6-8
Ghee - 2 tbsp
Condensed Milk - 1 tbsp





Method:

          Heat 2 tablespoons of ghee & roast the cashews until they are light brown. Remove & keep aside.Roast raisins separately & keep aside.In the same pan, roast the vermicelli for about 1-2 minutes until they turn light brown.
  
         Bring the milk to boil & add the vermicelli & mix well.Stir frequently to avoid the vermicelli settling at the bottom or burning.As the vermicelli cooks, you'll find the milk thickening.When the consistency is thicker, add sugar,coco powder & cardamom powder and let it cook for another 2 minutes(don't let it thicken too much coz it anyways tends to thicken on cooling).

         Now add condensed milk & mix.Condensed milk helps the payasam to thicken well and also gives the sweet a great taste.Add cashews,raisins & mix well.
Serve chilled by adding chocolate chips :-),u can serve warm also.

Veg Club Sandwich


Ingredients:

Paneer cut into thin slices - 50 gms
Cheese slices - 2
Bread - 6 slices
Butter - enouh to spread
Cucumber - 1 (cut into paper thin slices)

Mix in a bowl:
Mayonnaise - 4 tbsp
Finely chopped capsicum - 1/4 cup
Finely shredded cabbage - 1/4 cup
Grated carrot - 1/4 cup
Pepper - 1/4 tsp





Direction:

                Mix well the ingredients mentioned in the mix in a bowl.check seasonings.add more if required.Sprinkle salt and pepper into the thin slices of paneer.Toast all the bread and spread butter on one side of each toast.Place a cheese slice.Lay some cumber slices on the cheese.place another buttered toast on it,with the butter side down on the cucumber pieces.

              Now place a paneer slice on the bread.Spread some mayonnaise mix on the bread and press on the paneer slice.Repeat with other slices.Cut the sandwich diagnolly into two or four pieces.To decorate the sandwich,pierce a small piece of lettuce throgh a tooth pick and top with a cherry.

You can even use chicken slice or veg cutlet instead of paneer..

Fruit Kebab






Ingredients:

Apple - 1
Banana - 1
Pine apple - 1/2
Bamboo sticks - 5
Oil to grease the grill pan

For marinade:
Brown sugar - 3 tbsp
Honey - 2 tbsp
Lemon juice - 3 tbsp
Salt to taste

                       

Method:

      In a bowl,mix brown sugar,honey,lemon juice and salt.Add the fruits cut into small pieces,mix well,make sure that all the fruit pieces are covered with the marinade.

      Now thread the fruit pieces onto the bamboo sticks.Grease the grill pan with a little oil and heat it.Now place the fruity sticks in the grill pan and cook.(cover and cook so that it becomes golden brown).Serve it hot hot......u can garnish with walnut,cherries and cashews...

Almondy Brown Wood and Award Time




Ingredients:

Marie Biscuit - 17 nos
Warm milk - 1/4 cup
Coffee powder - 1/4 tsp
Powdered sugar - 3 tbsp
Cocoa powder - 1 1/2 tbsp
Unsalted Butter - 250 gms
Almond essence - 1/2 tsp
Crushed almonds - 10 nos.



Method:

               Firstly blend the butter, sugar,almond essence and cocoa to make a smooth paste,keep it aside.Now mix the milk and coffee powder.Then dip each marie biscuit into the coffee and stack one over other.Cover all the sides of  the stacked biscuits with the cocoa mix,sprinkle the crushed almonds and refrigerate for a while before serving.

Cut and serve with a pleaant smile :-)

Chic noodle egg omelette

Chic noodle egg omelette

 


Ingredients:

Shredded chicken pieces(boiled) – 2 Cups
(from left over, chicken curry or chicken roast, or chicken fried)
Eggs – 4

Noodles - 1 1/2 cup (boiled)
Onion – 1 finely chopped

Green chilly - 1 tbsp
Turmeric powder - 1 tsp
Salt – To Taste


 
 
Method:
  
      Beat the eggs well. Add onions, green chillies, turmeric powder,chicken,noodles and salt. Heat oil in a large frying pan,spread the mixture into it.Cook over low heat till the mixture is firm and flip it and fry the other side. Serve it hot as a heavy tea time snack.

Vanilla Ice cream (Easy and yummy)

Homemade Vanilla Ice cream

 
 
Ingredients:

Full cream milk - 1 litre
Corn flour - 2 1/2 tsp
Egg - 1
Sugar - 3/4 cup
Fresh cream - 1 cup
Vanilla essence - 1 tsp
Cold milk - 1/2 cup

Method:

  • Bring milk to boil.Boil for 15 minutes on low flame stirring continuously
  •  Mix corn flour in 1/2 cup cold milk and keep aside.
  • Add sugar to the boiling mix and stir
  • Now add the corn flour paste,stirring continuously,till boil resumes
  • Boil for a further 4-5 minutes
  • Beat the egg and add to it.Now take off the fire
  • Cool milk to room temperature
  • Freeze in covered tray till set,not hard
  • Break into pieces and beat it in a mixer grinder or egg beater till soft
  • Add cream and essence and mix well.The texture should be soft,creamy and smooth
  • Reset in the freezer till frozen
  • Serve chilled with cherry and chocolate syrup.

Ingredients:

Dalda or vegetable ghee - 1 cup
Powdered Sugar - 1 cup
Almonds (crushed) - 1/2 cup
Powdered cardamom - 1/2 tsp





Method:
             In a bowl,mix all the ingredients and make a smooth dough.If the measurement is exact u dont need the addition of anything.Pre-heat the oven for 5 minutes at 180c or in a medium flame.Make lemon sized balls and flatten them lightly.Place it on the baking tray spread with aluminium foil.Bake for approx 6-7 minutes in a low flame.Allow it to cool down.Now u can store in an air tight container and kep for 5-6 days.

Ingredients:

Dalda or vegetable ghee - 1 cup
Powdered Sugar - 1 cup


Method:

             In a bowl,mix all the ingredients and make a smooth dough.If the measurement is exact u dont need the addition of anything.Pre-heat the oven for 5 minutes at 180c or in a medium flame.Make lemon sized balls and flatten them lightly.Place it on the baking tray spread with aluminium foil.Bake for approx 6-7 minutes in a low flame.Allow it to cool down.Now u can store in an air tight container and kep for 5-6 days.




Note:Measurement should be exact for the nan khatai to be perfect.
