Cheesy Almond Toasts





Ingredients;

Bread slices - 4
Grated cheddar cheese - 3 tbsp
Egg - 1
Almond powder - 4 tbsp
Finely chopped cabbage - 1/4 cup
Butter to spread
Pepper powder -1/4 tsp
Salt to taste



Preparation:

    Whisk the cheese with salt,pepper and egg to get a coating consistency.Now add almond powder and cabbage.Now butter both the sides of bread.Spread the mix on one side of the slice.Grill in medium flame for 10-12 minutes.The toast is ready.Good as break fast.

kuzhal pathiri or Thin kerala pathiri


Ingredients:

Roasted rice powder - 1 glass
Water - 1 glass
Oil - 1 tsp
Salt to taste




Preparation:

      Boil water in a pan.Add enough salt and 1 tsp of oil.Slowly add rice powder stirring continuously.Now switch off the stove and pour the whole content into a big saucer kinda plate.Allow it to reach a warm condition.Then knead the content and make dough.A well kneaded dough results in soft and puffy pathiris.Apply oil on the palms to avoid stickiness.

    Now take pieces from this dough,as we do for chappathis.Make balls and press it between palms.Dust the board using rice powder.Roll the flattened balls on a wooden board using the chappathi roller until the pathiri is thin and round.Now cut the edges using a lid.

   Place a pan on medium flame.When the pan is hot,place pathiri.Now you can notice the steam passes through it within a few seconds.Turn the pathiri.Now wait for a little longer time.Make sure pathiri should not turn brown.Now turn again and you can see the pathiri puffs up.Remove from the pan.

Tips:
Use coconut milk while serving the pathiri to make it soft.
U can roll and keep the pathiris in an air tight container in the refrigerator,Make the pathiris as and when required.U can store the rolled pathiris for 2-3 days.

Broccoli Mayo Wraps


Ingredients:

Chappathi - 4 nos.
Cumin seeds - 1 tsp
Finely chopped garlic - 1 tsp
Onion cut into rings - 1
Tomato cut into small pieces - 1
Broccoli small cut into tiny florets - 1
Coriander powder - 1/2 tsp
Garam masala - 1/4 tsp
Mango powder - 1/4 tsp
Turmeric powder - 1/4 tsp
Lemon juice - 1 tbsp
Mayonnaise - 3-4 tbsp
Tomato ketchup - 2 tbsp
Oil - 3 tbsp
Salt to taste



    
Preparation:

             Heat oil in a pan for filling.Add jeera/cumin seeds and garlic,stir till the colour changes.Now add onion rings and stir till it becomes soft.Add broccoli and fry for sometimes.Now add all the powders including garam masala.Now add tomato and fry for sometimes.add lemon juice and salt to taste.when broccoli gets cooked remove from fire.

            Now spread some mayonnaise on each chappathi covering till the sides.spread the filling mixture on the chappathi and roll it tightly and seal the end with some tomato ketchup.Heat 1 tbsp oil and pan fry the wrap with tucked side down till golden on both sides.Serve hot.

Veg Club Sandwich


Ingredients:

Paneer cut into thin slices - 50 gms
Cheese slices - 2
Bread - 6 slices
Butter - enouh to spread
Cucumber - 1 (cut into paper thin slices)

Mix in a bowl:
Mayonnaise - 4 tbsp
Finely chopped capsicum - 1/4 cup
Finely shredded cabbage - 1/4 cup
Grated carrot - 1/4 cup
Pepper - 1/4 tsp





Direction:

                Mix well the ingredients mentioned in the mix in a bowl.check seasonings.add more if required.Sprinkle salt and pepper into the thin slices of paneer.Toast all the bread and spread butter on one side of each toast.Place a cheese slice.Lay some cumber slices on the cheese.place another buttered toast on it,with the butter side down on the cucumber pieces.

              Now place a paneer slice on the bread.Spread some mayonnaise mix on the bread and press on the paneer slice.Repeat with other slices.Cut the sandwich diagnolly into two or four pieces.To decorate the sandwich,pierce a small piece of lettuce throgh a tooth pick and top with a cherry.

You can even use chicken slice or veg cutlet instead of paneer..

Prawns/shrimp Idli



Ingredients:

White rice - 1 cup
Urud dal - 1 cup
Boiled rice - 1 handful
Salt to taste
Prawns - 10 medium
Dried chilly flakes - 1/2 tsp
Coriander leaves - 2 tsp
Oil
Turmeric pwdr - 1/4 tsp
Chilly pwdr - 1/4 tsp

Method:

     Wash and soak rice and urud dal for 8 hrs.Drain and grind the rice,boiled rice and urud dal using sufficient water to make a batter of dropping consistency.Allow it to ferment for five to six hours or overnight in a warm place.in a pan fry the prawns with sufficient salt,turmeric pwdr and chilly pwdr using a little oil.Add salt,chilly flakes,coriander leaves and fried prawns in the batter and mix well.Boil sufficient water in a steamer.Lightly greaase the idli moulds with oil.Pour a spoonful of batter into each mould.Fit the idli moulds into the idli maker or steamer.Steam for 10-15 minutes.Serve hot with coconut chutney.
