Kallummakka Nirachathu/Stuffed Mussels


Ingredients:
Kallummaka/Fresh mussels - 15

For stuffing:
Rice flour/puttu podi - 2 cups
Turmeric powder - 1/2 tsp
Shallots - 6-7
Coconut grated - 1 handful
Fennel seeds - 1/2 tsp
Green chilli - 1 chopped
Ginger - a small piece
Salt to taste
Water
Oil

For the batter:
Chilli powder - 2 tbsp
Turmeric powder - 1/2 tsp
Rice flour - 1 1/2 tsp
Water - 3-4 tbsp
Salt to taste



Method:
    Grind coconut well,without addin water.Add fennel seeds,shallots and gind again to get a coarse paste.
In a large bowl,add rice flour,turmeric powder and salt.mix well.To this add ground coconut mixture.Add boiling water slowly and mix it well until the mixture comes together.knead it to get a smooth dough.Cover and keep this mixture aside.

     Now clean the outer part of the mussels by scrubing away all the dirt.Use only the mussels that are closed tight.Using a knife,slowly slide the slits of the mussels and open them slowly without breaking the shells apart.Now pull out the hairy particles form the flesh.Wash the opened mussels very carefully to clean all the dirts.Strain the mussels to make it free of water.

    Make plum sized balls of the rice dough.Wide open the shells without breaking them and stuff the dough into the shells.Shape them neatly by taking the excess dough.Stuff all the shells in the same manner.Now steam them for 20-25 minutes.They will be sticky when hot but gets firmer as it cools down.Now slowly open the shell and take out the cooked stuffing taking care not to part the mussel from the dough.For the mussels stuck to the shell,u can use knife or the shell.Then remove the black colour part from it.



        Add oil in a frying pan on a medium flame.Now mix chilli&turmeric powders,rice flour and salt with water to make a thin paste.Dip the dough into this mix and slide into the hot oil in the frying pan on medium flame.Fry on all sides until it turns a dark colour.A yummy evening snack for all age group...

Cheesy Almond Toasts





Ingredients;

Bread slices - 4
Grated cheddar cheese - 3 tbsp
Egg - 1
Almond powder - 4 tbsp
Finely chopped cabbage - 1/4 cup
Butter to spread
Pepper powder -1/4 tsp
Salt to taste



Preparation:

    Whisk the cheese with salt,pepper and egg to get a coating consistency.Now add almond powder and cabbage.Now butter both the sides of bread.Spread the mix on one side of the slice.Grill in medium flame for 10-12 minutes.The toast is ready.Good as break fast.

Sweet Banana Cutlet and an award!!!


 



Ingredients:

Kerala Banana,ethapazham (not so ripe not so raw) - 2 nos
Almonds (chopped and fried without skin) - 6-7
Kismis (fried) - 9-10
Coconut fried - 1 cup
Cardamom powder - a pinch
Sugar if required
Ghee or oil for shallow frying



Preparation:

     Steam the bananas in a steamer.Then smash it with a spoon/masher.Now mix all the ingredients.Make into balls and shape it like cutlets.Heat oil/ghee and shallow fry it.Serve hot.

Broccoli Mayo Wraps


Ingredients:

Chappathi - 4 nos.
Cumin seeds - 1 tsp
Finely chopped garlic - 1 tsp
Onion cut into rings - 1
Tomato cut into small pieces - 1
Broccoli small cut into tiny florets - 1
Coriander powder - 1/2 tsp
Garam masala - 1/4 tsp
Mango powder - 1/4 tsp
Turmeric powder - 1/4 tsp
Lemon juice - 1 tbsp
Mayonnaise - 3-4 tbsp
Tomato ketchup - 2 tbsp
Oil - 3 tbsp
Salt to taste



    
Preparation:

             Heat oil in a pan for filling.Add jeera/cumin seeds and garlic,stir till the colour changes.Now add onion rings and stir till it becomes soft.Add broccoli and fry for sometimes.Now add all the powders including garam masala.Now add tomato and fry for sometimes.add lemon juice and salt to taste.when broccoli gets cooked remove from fire.

            Now spread some mayonnaise on each chappathi covering till the sides.spread the filling mixture on the chappathi and roll it tightly and seal the end with some tomato ketchup.Heat 1 tbsp oil and pan fry the wrap with tucked side down till golden on both sides.Serve hot.

Veg Club Sandwich


Ingredients:

Paneer cut into thin slices - 50 gms
Cheese slices - 2
Bread - 6 slices
Butter - enouh to spread
Cucumber - 1 (cut into paper thin slices)

Mix in a bowl:
Mayonnaise - 4 tbsp
Finely chopped capsicum - 1/4 cup
Finely shredded cabbage - 1/4 cup
Grated carrot - 1/4 cup
Pepper - 1/4 tsp





Direction:

                Mix well the ingredients mentioned in the mix in a bowl.check seasonings.add more if required.Sprinkle salt and pepper into the thin slices of paneer.Toast all the bread and spread butter on one side of each toast.Place a cheese slice.Lay some cumber slices on the cheese.place another buttered toast on it,with the butter side down on the cucumber pieces.

              Now place a paneer slice on the bread.Spread some mayonnaise mix on the bread and press on the paneer slice.Repeat with other slices.Cut the sandwich diagnolly into two or four pieces.To decorate the sandwich,pierce a small piece of lettuce throgh a tooth pick and top with a cherry.

You can even use chicken slice or veg cutlet instead of paneer..

Almondy Brown Wood and Award Time




Ingredients:

Marie Biscuit - 17 nos
Warm milk - 1/4 cup
Coffee powder - 1/4 tsp
Powdered sugar - 3 tbsp
Cocoa powder - 1 1/2 tbsp
Unsalted Butter - 250 gms
Almond essence - 1/2 tsp
Crushed almonds - 10 nos.



Method:

               Firstly blend the butter, sugar,almond essence and cocoa to make a smooth paste,keep it aside.Now mix the milk and coffee powder.Then dip each marie biscuit into the coffee and stack one over other.Cover all the sides of  the stacked biscuits with the cocoa mix,sprinkle the crushed almonds and refrigerate for a while before serving.

Cut and serve with a pleaant smile :-)

Chic noodle egg omelette

 


Ingredients:

Shredded chicken pieces(boiled) – 2 Cups
(from left over, chicken curry or chicken roast, or chicken fried)
Eggs – 4

Noodles - 1 1/2 cup (boiled)
Onion – 1 finely chopped

Green chilly - 1 tbsp
Turmeric powder - 1 tsp
Salt – To Taste


 
 
Method:
  
      Beat the eggs well. Add onions, green chillies, turmeric powder,chicken,noodles and salt. Heat oil in a large frying pan,spread the mixture into it.Cook over low heat till the mixture is firm and flip it and fry the other side. Serve it hot as a heavy tea time snack.

Almond naan khatai

Almond Naan Khatai


Ingredients:

Maida or all purpose flour - 2 cups
Dalda or vegetable ghee - 1 cup
Powdered Sugar - 1 cup
Almonds (crushed) - 1/2 cup
Powdered cardamom - 1/2 tsp





Method:
             In a bowl,mix all the ingredients and make a smooth dough.If the measurement is exact u dont need the addition of anything.Pre-heat the oven for 5 minutes at 180c or in a medium flame.Make lemon sized balls and flatten them lightly.Place it on the baking tray spread with aluminium foil.Bake for approx 6-7 minutes in a low flame.Allow it to cool down.Now u can store in an air tight container and kep for 5-6 days.

Masala peanut

Masala kappalandi





Ingredients :

Peanuts(roasted,skinned or skinless) - 1 cup
Besan Powder/maida - 2 tsp
Rice Powder - 2 tsp
Chilli Powder - 2 tsp
Amchur or Dry Mango Powder - 1/4 tsp
Asofetida - a pinch
Garlic   - 2 cloves crushed
Chaat masala - 1/2 tsp (optional)
Salt to taste
Curry Leaves - 10-12 leaves
Oil to deep fry


Method: 
    Make a very thick paste of all ingredients(except nuts and oil)using cold water and add curry leaves to it. Now toss in peanuts, mix till well and evenly coated. Heat oil in a frying pan, till smoky. Reduce heat, drop in coated nuts one by one, quickly. Fry till crisp. Drain, cool and serve with tea, drinks, or as anytime munchy. I prefer while watching tv.

A Simple Pineapple Cake

Pineapple Upside Down Cake


Ingredients:

  • All purpose flour or maida - 2 cups
  • White sugar - 2 cups
  • Egg - 2
  • Baking soda  - 2 tsp
  • Vanilla Essence - 1 tsp
  • Crushed pineapple with juice(can) - 1
  • Crushed Almonds - 2 tbsp
  • Cream Cheese - 2 tbs
  • Butter - 1/2 cup
  • Salt - a pinch  
  • Oil - 1 tsp

Directions:

              Preheat oven to 350 degrees F (175 degrees C) or high flame for 5 minutes.Spread a little butter on the baking pan.Arrange pineapple slices in a single layer in the pan.Whisk the flours, almonds, baking powder, and salt in a large mixing bowl.
                       In a separate bowl, use an electric mixer to beat the sugar and butter together until light. Add eggs one at a time, beating after each addition. Beat in the vanilla essence. Add dry ingredients(ie,mix of flour,almonds..) alternately with cream cheese, beating well after each addition. Pour cake batter over pineapple in pan.
          Bake cake until tester(toothpick) inserted into the center comes out clean(bake for about 45 minutes in medium flame). Cool cake in pan on a rack for 10 minutes. Turn cake out onto a platter. Serve warm or at room temperature.

Tapioca cutlet/

Kappa cutlet             
                Every part of Kerala refers to Tapioca in a different name. Kappa, Kolli, Poola, Marachini are some of the names to my knowledge. May be there are more which I am not aware of....Tapioca in the form of cutlets,have u ever tasted???if not,try this,u ll be tempted to make it again and again..This tastes excellent with ulli chammanthi,mulaghu chammanthi,ketchup.....try ths.....




Ingredients:
Tapioca chopped into cubes - 2 cup
Onion chopped - 1
Green chilly chopped - 4 nos
Ginger - a small piece
Curry leaves - 4-5
Turmeric - 1/2 tsp
Egg - 1        
Salt
Oil for frying
Bread crumbs - 1 cup

Method of preparation:
                    
                        Cook tapioca with turmeric and salt. The cooked water is usually discarded since some toxic from the root is released on cooking. Heat oil in a kadai. Add the chopped chillies,ginger and curry leaves. Add chopped onion to it and saute till pink. Crumble the cooked tapioca and mix with the seasonings. Check the salt and let it cook for few minutes. Cool and mix together. Take small balls out of it and shape into cutlets...Now whisk the egg in a bowl,dip the cutlet, and now roll in the bread crumbs.Deep fry in the oil......serve hot with chammanthi or ketchup.

Orange Cashew Muffins





Ingredients:

Eggs - 2
Freshly squeezed orange juice - 1/2 cup
Unsalted butter (melted) - 16 tbsp 
Milk - 1/2 cup
All-purpose flour(Maida) - 3½ cups .Here i use maida due to the unavailability of all purpose flour
Sugar - 1 cup
Baking powder - 1 tsp
Baking Soda - 1 tsp
Cashew powder - 1 tbsp
Orange essence - 1 tsp
Salt - 1/4 tsp
Broken cashew - 2 tbsp



Directions:

              Preheat the oven(am using the gas oven)with high flame for 10 minutes.In a mixing bowl, combine the milk, orange juice,eggs,orange essence and melted butter.Whisk together to blend.In a large mixing bowl, combine the flour, sugar,cashew powder, baking powder,baking soda and salt.  Stir to blend.Pour the wet ingredients into the dry ingredients and mix using the egg beater,beat for 5-10 minutes.Now add the broken cashews into it.U will get around 24 muffins out of it



                  Line the wells of a muffin pan with paper liners or grease it with a little butter. Divide the batter evenly between the prepared muffin cups.  Bake about 18-20 minutes, or until a toothpick inserted in the center comes out clean.  Let cool in the pan 5-10 minutes, then transfer to an air tight container.u can store it for 3-4 days..

kozhi ada/ Meat hot pockets


    The crispy tiny delight of Malabar....a tasty snack to munch with tea or coffee...a celebrity in ifthars....a very common snack in my house....i can make the bet...noone can stop with one....keep on eating and eating......try it out and see....



Ingredients:

For the leaf:
Maida/Aatta (maida tastes good) - 2 cups
Water - as required
Salt - as required

For the filling:
Boneless chicken or beef minced- 250 gms
Onion - 1 sliced into tiny pieces
Ginger-garlic minced - 2 tsp
Green chillies - 2 cut into very small pieces
Turmeric pwdr - a pinch
Chilly pwdr - 1/2 tsp
Garam masala - 1/2 tsp
Oil ffor sauting - 1 1/2 tbsp
Salt as required

Oil for deep frying

Method of preparation:

 Make a smooth dough with flour,water and salt.keep it aside by covering them.

      For the filling,cook the minced chicken or beef adding sufficient salt.now heat a pan and add 1 1/2 tbsp of oil to it.saute onion until it turns its colour a little(transparent).Now add the minced ginger-garlic and chillies and saute.add the minced meat and saute.now add all the powders,salt and garam masala and saute till the filling becomes dry.

      Make small balls out of the dough kept aside.roll out into thin circles or u can make big balls and roll,thn using small round lids u can get circles.keep a little chicken filling in the middle and fold into half moon shape.join the ends by shaping it with hands or press it with forks..

   Deep fry them in a heated oil until golden brown...drain and serve hot...yummy yummy...dont waste time...jz try it out...

Dates dip fry


Ingredients
Dates - 10 nos.
All purpose flour -3 tbs
Egg-1
Condensed milk-1/2 tbs
Sugar as per taste
Milk - 2 tbs
Oil to fry

Method of preparation
Mix all the ingredients,except dates,and make a batter little thicker than dosa batter.Dip the dates and deep fry it...Serve it hot hot at tea time...

Kaayada or Stuffed Banana

This is a very tasty snack which almost everyone in our family likes to eat and my mom makes it on our taste.My sis-in-law is fond of kaayadas and she eats around 100s of it when she is with chemmannur umma..he he he..This fills our stomach and is also a very healthy food......



Ingredients
Large Plantains (half riped)- 4
Eggs  - 5
Sugar - 5 tbs
Kismis - 15
Cashew nuts - 15
Crushed cardamom - 1 tsp
Freshly grated coconut (Optional) - 1/2 cup
Oil for frying

Method
1. Steam cook the plantains with the skin on until soft.
2. Once they are completely cooked and soft, grind them into smooth in a food processor in two or three   batches without using any water. Make sure you dont grind them to puree.Set them aside.
3. For preparing the filling, Break the eggs and add sugar to it. Mix well with spoon. Sugar doesnt have to dissolve. Keep them aside too.
4. Heat a large frying pan, add oil and add the chopped cashews.When they gets a golden colour, fish them out and drain them on a kitchen towel. To the same pan, add the raisins and leave there for few seconds until they puff like little balls.Take them out and keep them along with the cashews.
5. In the same pan, add the egg - sugar mixture, coconut, raisins and nuts and scramble them by stirring continuously until the egg is completely cooked. Add the crushed cardamom and stir well.
6. While the plantains are still warm, grease both hands and make small balls out of it. You should be able to get around 20-25 balls with this amount.
7. Flatten the balls into disk shapes of about 3/4 cm thickness, by placing the plantain ball in one hand and flattening it using the fingers of other hand.
8. Place 1 tbs of filling inside and seal the edges. Dont put too much of filling in; else it will be difficult to seal them. Smooth the stuffed plantain balls in to rugby ball shapes by rolling it in hand. Make sure there are no cracks anywhere. Grease your hand well, incase needed to avoid the mashed plantains sticking to your hand. Do the same with the rest of the planatains and filling
9. Place a kadai/deep frying pan on medium heat and add oil. When the oil is hot enough, Add few kaayadas at a time and fry until light browned on all sides. Drain and serve warm as a tea time snack.

Chicken cutlet

A perennial kid favorite, easy for a mom and child to prepare together. They taste great served fresh from the pan and dipped in tomato ketchup. 






Ingredients

Chicken breast halves,skinless and boneless - 4
Eggs - 2
Onion - 2
Ginger-garlic paste - 1 tsp
Green chilly - 5
Garam masala - 1 tsp
Turmeric powder - 1 tsp
Bread crumbs - 3/4 cup
Potato - 1
Curry leaves - 5
Coriander leaves to taste
Freshly ground pepper to taste
Vegetable oil as needed
Salt to taste


How to make Chicken Cutlets

  Boil the chicken pieces till it become soft.smash it well.In a fry pan add some oil and fry onions till it turns golden brown,then add ginger-garlic paste and also chopped chillies,curry leaves and corriander leaves.Add garam masala,turmeric powder,salt and pepper powder.fry for few seconds.Mix the smashed chicken pieces into it and mix well.
 Boil the potato,smash it and mix it well with the above mix.From this dough make round or square shaped cutlets.
 In a small bowl beat the egg thoroughly and dip the cutlets and then spread the bread crumbs. Put the crumbed cutlets into the refrigerator till nearly time to serve.  In a big skillet, heat oil on medium-high flame till hot. Cook the cutlets on each side till golden brown, for about 5 minutes.

Banana Mixture


   This is specially meant for kids.During our school days my mother makes this on weekends.This is very healthy and tasty for those kids who doesnt like banana.

Ingredients
Banana          - 1
Egg                - 1
Cashew          - 5
Almonds        - 5
Raisins          - 8
Sugar            - 1 tsp
ghee              - 2 tsp

Method of preparation
     Cut the banana into small pieces.Heat a frying pan and put 2tsp ghee into it.Add the banana and fry till it turns golden brown.then add egg and mix it well.once the egg also gets fried add cashew,almonds and raisins and fry it.Finally add sugar into it and fry for sometimes...Itz a must try out snack....

Chicken Burger


Ingredients
Burger bun - 1
Egg- 1
Chicken burger- 1
Onion slices in round- 2 pieces
Tomato slices in round - 2 pieces
Sliced cheese- 1
French fries- 2 pieces
Cabbage slices- 3 pieces
Oil to fry
Pepper powder- 1 tsp
salt a pinch

Preparation
    Fry the chicken burger on a pan with a little oil.on another pan fry the egg(bulls eye) and spread some pepper and salt in it and fry this side also(double sided).Slit the burger bun into two and on the lower part fo the bun keep the burger and on the top the sliced cheese.Then keep the tomoto pieces,sliced onion,cabbage,french fries and the fried egg.On the top keep the upper layer of the bun.Either microwave it for 5 minutes or in a pan heat it.

Taste it and pass on your suggestions.
