Cheesy Almond Toasts





Ingredients;

Bread slices - 4
Grated cheddar cheese - 3 tbsp
Egg - 1
Almond powder - 4 tbsp
Finely chopped cabbage - 1/4 cup
Butter to spread
Pepper powder -1/4 tsp
Salt to taste



Preparation:

    Whisk the cheese with salt,pepper and egg to get a coating consistency.Now add almond powder and cabbage.Now butter both the sides of bread.Spread the mix on one side of the slice.Grill in medium flame for 10-12 minutes.The toast is ready.Good as break fast.

Chic noodle egg omelette

Chic noodle egg omelette

 


Ingredients:

Shredded chicken pieces(boiled) – 2 Cups
(from left over, chicken curry or chicken roast, or chicken fried)
Eggs – 4

Noodles - 1 1/2 cup (boiled)
Onion – 1 finely chopped

Green chilly - 1 tbsp
Turmeric powder - 1 tsp
Salt – To Taste


 
 
Method:
  
      Beat the eggs well. Add onions, green chillies, turmeric powder,chicken,noodles and salt. Heat oil in a large frying pan,spread the mixture into it.Cook over low heat till the mixture is firm and flip it and fry the other side. Serve it hot as a heavy tea time snack.

Egg Kurma/

Chettinadu Egg Curry


                I have been making the egg curry in  somewhat similar way for what seems like forever, and last week i decided itz high time to try something new with boiled eggs. I have the book '50 great curries of india' by Camellia Panjabi and decided to give her recipe Egg Kurma(Chettinad) a try.This recipe is definitely something i'm gonna treasure,coz my husband appreciated me a lot.



  
Ingredients:

Eggs (hard boiled) - 6nos
Coriander Powder - 3tsp
Chili Powder or Paprika - 1 1/2tsp
Fennel Seeds - 1tsp
Cumin Seeds - 1tsp
Turmeric Powder - 1/2tsp
Fresh Ginger -1/2inch piece
Garlic Cloves - 2nos
Coconut Milk - 200ml or 1 cup
Oil - 2tbsp
Fenugreek Seeds - 1/2tsp
Fennel seeds -1/2tsp (set 2)
Cinnamon Sticks - 2 inch piece
Onions - 225gms or 2 nos. (finely chopped)
Tomatoes: 225gms or 2 nos.(finely chopped)
Salt as per taste
Lime Juice - of 1/2 a lime (i dint use this)




Preparation:

* Boil the eggs.Peel the eggs and halve them lengthways

*Put coriander powder, chili powder, fennel and cumin seeds, turmeric powder, ginger and garlic into a blender with 2 tbsp water and puree into a thick paste.

*Put the coconut into a blender with 400ml of warm water. Liquidise, then strain the coconut milk and set aside.

*Heat the oil in a kadai/wok and fry the fenugreek seeds, fennel seeds and the cinnamon for 10seconds. Add the onion and fry until lightly coloured. Add the spice paste and saute for 7 minutes. (It will darken in colour since it contains a lot of coriander.) Add a few drops of water if it sticks to the bottom of the kadai. Then add the tomatoes and saute for another 2-3minutes.

*Add 600ml (1/2pint) of warm water with salt to taste, cover and simmer for 20 minutes, to make a smooth gravy. just before serving, add the coconut milk and bring to boil. Add the lime juice(since we r using 2 tomatoes,i dint use lime juice), taste and add more salt if necessary, and gently lay in the hard boiled eggs with the yellow facing upwards. Carefully scoop into a serving dish.




If you want to freeze this curry, omit the coconut and eggs, but add lime juice and salt and freeze. Then use it to make egg curry as and when you need, topping it with coconut milk at the time of reheating.You can serve this with appam,idiyappam,pathiri...

Omelette Gravy


Ingredients:

For the omelette
Eggs - 3
Onion chopped - 1 small
Green chillies finely chopped - 2
Pepper pwdr - a pinch
Salt to taste
Oil to fry

For the Gravy
Onion chopped - 2
Green chilliy - 2
Curry leaves - 5-6 leaves
Salt to taste
Chilly pwdr - 1 tsp
Turmeric pwdr - 1/2 tsp
Oil - 1 2tsp

Method:

              To make omelette,whisk the eggs.Add onion,green chillies,pepper and salt and mix well.Heat a little oil in a large pan and when hot,pour in the egg and chilli mixture.when the lower side of the omelette is cooked,turn the omelette over with a large spatula.Let the other side cook,then remove from the heat.Cut the omelette in half then cut crossways.

      To make the gravy,heat oil in the pan and fry the sliced onions in a medium flame fro about 10 minutes.Now add curry leaves and green chillies silted to it.Fry for some more times.Add chilly pwdr and turmeric pwdr to it and fry for some times.Now add the omelette pieces and mic it well...serve hot hot...

Muttakuzhiyappam



Ingredients:
Basmati/Raw rice or pachari - 1 cup
Boiled rice -3/4 cup
Egg - 2
Salt to taste
Water as required





 Method:
             
            Wash and soak rice in water for 5-6 hours.Drain and grind this with all the other ingredients in a mixer grinder adding enough water to a smooth thin batter.Keep this batter for minimum 3 to 4 hours in a container.Now take a kuzhiyappam pan,this is a non stick pan, so you can easily make muttakuzhiyappam without the fear of sticking.
          


                 Heat the pan and pour oil in each rounds.When the pan and oil is hot enough simmer the flame and pour 1 tbsp of batter into each rounds.Slightly increase the flame and allow the appams to cook.After 2-3 minutes turn the appam upside down and cook that side.         



When both the sides become brown colour, remove the appam from the oil.Repeat the same process to make rest of the appams.




If u want varieities in this appam,u can add items of ur choice in the batter.Below is the appam made of prawns of my choice.




You can use it as breakfast without any curry.It tastes good with fish curry.My daughter is a great fan of muttakuzhiyappam..

Egg omelette sandwich

Egg omelette sandwiches are some of the easiest sandwiches in the world to make as a break fast or as a tea time snack.... 


Ingredients
Bread-5 slices
Eggs-2
Onion-1/4 (finely chopped)
Green chilies-  1-2 (finely chopped)
Tomato- 1/4 (chopped), optional
Chopped coriander leaves-2 tbs
Pepper-1 tsp
Butter to spread on bread for toasting in the tawa
Salt To Taste
Oil to fry

Method of preparing omelette
Beat the eggs and add chopped onions, tomatoes, green chilies, coriander, salt & pepper powder. Beat the mixture until foamed. Heat oil in a frying pan and add the mixture. Cook over low heat till mixture is firm and flip it and fry the other side.

How to toast the bread
 Spread the butter on the bread.heat a tawa for around 3 minutes in a low flame.keep the buttered bread on the tawa and toast till it turns golden brown.

   Make a sandwich by placing the omelette in between two slices of bread.Serve it hot.
