Cook the minced chicken with turmeric powder and salt till tender and all the water is evaporated.Add a little oil and fry for some times.Heat oil in a pan,add finely chopped onion and saute till transparent.Add the ginger-garlic-green chilly paste together.Add the cooked mince and mix well. Add in the turmeric powder and garam masala and mix well.<br />

<u>For the pancakes:</u><br />

Whisk together the flour,salt,egg and water to amke a smooth batter.Heat a flat bottomed pan,pour a laddle full of batter over it and make thin dosas out of it.just cook on one side of the dosa.<br />

<u>Layering:</u><br />
<u><br /></u>
Beat the egg thoroughly.Take a round shaped baking tray.Dip the first dosa in the beaten egg and place as the first layer in the tray.Spread the chicken filling evenly over the dosa. Garnish with sesame seeds and raisins.Now dip the second dosa in the egg,place it over the chicken filling and repeat the layering till its almost close to the brim of the tray.The top layer should be the dosa. Drizzle with ghee on the top.Granish with sesame seeds and raisins.Bake in an oven on medium flame for nearly 15 minutes or till the pathiri turns golden.<br />

Fry separately tuna fish in a pan.Put the tuna chunks in a pan and mash till broken.fry it with a little oil. On another pan add a little oil fry onion,ginger garlic paste,chilly,curry leaves.Now add all the powders.Then add slightly fried fish tuna into it.Mix well all the ingredients.Make round shaped or any cutlet shaped out of this. Whisk the egg in a bowl.Next to that get ready with bread crumbs spread in a plate. First dip the cutlet in whisked egg and coat it with bread crumbs.<br />

Heat enough cooking oil in a shallow frying pan. Fry a few cutlets at a time. Watch carefully and turn as each side gets golden. The cutlets are done when they are crispy and golden on both the sides. Drain on kitchen tissues and serve hot with a dipping sauce.<br />

Grind coconut well,without addin water.Add fennel seeds,shallots and gind again to get a coarse paste.<br />
In a large bowl,add rice flour,turmeric powder and salt.mix well.To this add ground coconut mixture.Add boiling water slowly and mix it well until the mixture comes together.knead it to get a smooth dough.Cover and keep this mixture aside.<br />

Now clean the outer part of the mussels by scrubing away all the dirt.Use only the mussels that are closed tight.Using a knife,slowly slide the slits of the mussels and open them slowly without breaking the shells apart.Now pull out the hairy particles form the flesh.Wash the opened mussels very carefully to clean all the dirts.Strain the mussels to make it free of water.<br />
<br />
Make plum sized balls of the rice dough.Wide open the shells without breaking them and stuff the dough into the shells.Shape them neatly by taking the excess dough.Stuff all the shells in the same manner.Now steam them for 20-25 minutes.They will be sticky when hot but gets firmer as it cools down.Now slowly open the shell and take out the cooked stuffing taking care not to part the mussel from the dough.For the mussels stuck to the shell,u can use knife or the shell.Then remove the black colour part from it.<br />

Boil water.Add enough salt and 1 tsp of oil.Slowly add rice powder stirring continuously.Switch of the stove and pour the content into a big plate.Wait till it reach a warm condition.Then knead it and make dough.The softness depends on how well u knead it.Take pieces from the dough as we do for chappathis.Make ball and press it using the chappathi press.Keep this pathiri on a piece of banana leaf.Add some masala in the centre leaving a little space from the circumference.Now make another pathiri of same size,cover the masala filled pathiri with this covering the masalas completely.Slowly press the edges using the fork to seal all the masala in.Carefully lift the banana leaf and place it in a steamer.Repeat the same process until all the masalas and the rice flour are used up.Steam cook for about 10-12 minutes minutes or until the pathiri is firm.<br />

Boil water in a pan.Add enough salt and 1 tsp of oil.Slowly add rice powder stirring continuously.Now switch off the stove and pour the whole content into a big saucer kinda plate.Allow it to reach a warm condition.Then knead the content and make dough.A well kneaded dough results in soft and puffy pathiris.Apply oil on the palms to avoid stickiness.<br />

Now take pieces from this dough,as we do for chappathis.Make balls and press it between palms.Dust the board using rice powder.Roll the flattened balls on a wooden board using the chappathi roller until the pathiri is thin and round.Now cut the edges using a lid.<br />
<br />
Place a pan on <strong>medium flame</strong>.When the pan is hot,place pathiri.Now you can notice the steam passes through it within a few seconds.Turn the pathiri.Now wait for a little longer time.Make sure pathiri should not turn brown.Now turn again and you can see the pathiri puffs up.Remove from the pan.<br />

Tips:<br />
Use coconut milk while serving the pathiri to make it soft.<br />
U can roll and keep the pathiris in an air tight container in the refrigerator,Make the pathiris as and when required.U can store the rolled pathiris for 2-3 days.<br />

Heat ghee in a biriyani maker.once the ghee get hot add chopped onions and fry it.Then add the spices and curry leaves into it.fry it and add 4 cups of water for 2 cups of rice.when the water get bolied add the rice which is cleaned.close it with a lid and leave it for 10 minutes in a medium flame.<br />

<u>Preparatiion of masala</u><br />

</u> Firstly marinate the squid with chilly powder and salt and keep aside for sometime.Then fry it.Now heat oil in a pan. Add ginger-garlic paste & stir. Add green chilli,curry leaves & stir. Add chopped onions & saute. Once the onion becomes golden brown in colour,add chopped tomatoes. When tomato is cooked add all the masala powder,turmeric,jeera powder,pepper powder and salt.. Saute it well.Then add fried squid,coriander leaves,coconut paste,curd & cook for 10-15 minutes.<br />
<br />
<u>Layering</u><br />
On a biriyani maker put the masala as first layer.then put rice on the top of it as second layer.make the layers till the masala and rice is fully filled.on the top of it, spread corianer leaves, fried onion,cashew and kismis(optional).close the lid tightly and put it on a low flame.dhum it for 20 minnutes.<br />

Fish pieces - 500 gms (better use fish fillets cut into small pieces,i used king fish with bone)<br />
Cooked rice - 2 cups<br />
Yoghurt - 1/4 cup<br />
Turmeric powder - 1 tsp<br />
Red chilly powder -1 tsp<br />
Coriander powder - 1 tbsp<br />
Garam masala - 1/4 tsp<br />
Green chillies - 2 (slit)<br />
Ginger-garlic paste - 2 tbsp<br />
Onion sliced - 2 <br />
Fried onion - 1/4 cup<br />
Mint leaves - 20<br />
Coriander leaves - 2 tbsp<br />
Lemon juice - 1 tbsp<br />
Oil - 1 tbsp<br />
Salt to taste<br />

Place the fish in a non stick pan,add half a cup of yoghurt,turmeric,chilly,coriander powders,half tsp garam masala,green chillies,ginger garlic paste,sliced onion(slightly crushed with hands),fried onion,salt,lemon juice,mint leaves,coriander leaves and mix well.<br />

Now spread the rice over the fish.Spread the remaining yoghurt and sprinkle some salt.sprinkle garam masala powder,mint leaves and drizzle oil.Cover and cook on high heat for 5 minutes.Reduce heat and cook for 15 more minutes.Now serve this hot fish biriyani....<br />

<strong><u>Method to take beef fry to the dining table:</u></strong><br />

Marinate the beef pieces using the marinade above.Keep the marinated beef for around 30-45 minutes.After this pressure cook the beef till it is done(first in low flame and then in medium flame).Make sure that there is no excess water in the pressure cook.<br />
<br />
Heat coconut oil,u can even use normal cooking oil,in a frying pan.Now add curry leaves and red chillies.add coconut pieces,fry it for sometimes.now add the cooked beef,jeera,elachi and stir it.cook till the beef turns dark in colour on medium flame.Fry for somemore time by stirring in between.Now u can spread the fried beef on kitchen towel to wipe out the excess oil.Ready to serve hot....<br />
